Dylan Lundstrom has a master’s degree in viticulture but credits most of his knowledge to time spent working in the vineyard. With Aubry, he set out to make wines that feel honest and true to his vision. Aubry Chardonnay comes from a single organically farmed block in Oak Knoll AVA, with fruit sourced from Steve Matthiasson’s “Linda Vista” vineyard. The fruit is picked early and fermented slowly, resulting in a Chardonnay that drinks like a classic Chablis: bright, crisp and refreshing. The Cabernet Sauvignon is part of The Quiet Collection, coming from a single acre in Coombsville that Dylan farms entirely himself, without a crew. Aubry wines are meant to be opened and enjoyed. For Dylan, it’s about doing every step himself—from pruning and spraying to picking and pressing—in pursuit of an honest approach to winemaking.
