Elias Cairo grew up in a Greek-American home with a father who made charcuterie by hand, and generally did things the old-fashioned way. Elias later apprenticed in Europe where he rediscovered the art of curing meat and found inspiration in the Old World. The experience affirmed what he’d been taught all along: handmade is better. Back in Portland, Elias established Olympia Provisions where he now heads the craft of charcuterie.
