Dinner in 5-ish ingredients: an occasional series

“What’s for dinner?”

We can answer that. This month, our go-to dinner plan is an easy chicken roast, centered around bright cherry tomatoes, and plated on our house-made hummus. You can prep the ingredients quickly, pop it in the oven, and serve with your favorite wine and a baguette. There are plenty of ways to customize this weeknight dish, but not your choice of hummus. Ours is the real thing, made fresh in small batches by the Driver’s kitchen. This is not your average store-bought dip!

Chicken + Tomatoes over Hummus

2 Boneless skinless chicken breasts, chopped in chunks
1 Pint cherry tomatoes
6- 12 Whole garlic cloves, peeled
Olive oil
Salt + Pepper
1 Container hummus (we recommend our house made Driver’s hummus)
chopped thyme, for garnishing
Preheat oven to 375F.
Toss the chicken, cherry tomatoes, and the garlic cloves with the olive oil, salt, and pepper.
Spread evenly on a parchment lined baking sheet. Roast in the oven for 20-25 minutes, until the chicken is cooked through and the tomatoes are slumped and bursting.
In the meantime, spread the hummus on a platter (or individually on two plates). Remove the chicken and tomatoes from the oven and scoop atop the hummus. Drizzle olive oil over the top, sprinkle on some flaky salt, and garnish with the thyme.
Serves 2 for dinner. Enjoy with warmed pita or a crusty baguette.
